Mango Pudding


Sit back and have a bite of summer! So next time, you get mangoes home, don’t eat but devour them! Mango Pudding is the perfect way of enjoying that juicy, succulent fruit without getting into the hassle of messing your face and hands!

INGREDIENTS:

  • Ripe Mangoes – 3-4, big ones
  • Milk – 1/2 cup or less
  • Sugar – 1-2 tsp (if your mango is sweet, no need to add sugar, if tart add some)
  • Chopped nuts (raisins, almonds, cashew) – 3-4 tsp

METHOD:

  • Peel mangoes and slice them in small pieces. Discard the seeds.
  • Process them in the blender with milk and sugar (if required) and spin it around once or twice. Check for the consistency, the final result should be thick not watery.
  • Refrigerate for at least an hour. Sprinkle nuts on top before serving.
  • If you’re in a mood for more, go a step further and drop in a dollop of vanilla ice cream in the mango mush!

Yield – 4-5 servings

    Mangoes are everywhere right now, even in the US, you get a good variety of Mexican breed. I like making mango smoothies in the blender, this Mango pudding sounds good especially with all the nuts spread on the top of it.
