INGREDIENTS:
- Mushroom – chopped, 3 cups
- Onion – long stripes, ½ cup
- Green beans – cleaned and trimmed, 10 pieces
- Garlic – minced, 2-3 tsp
- Oil – to sauté
- Salt and pepper – for taste
For sauce –
- Soy sauce – 2 tsp
- Cornstarch – 2 tsp mixed in 2 tbsp water
- Red chilli flakes (if you want it spicy) – 1 tsp
METHOD:
- Wash Mushrooms in running water. Pat dry. Slice them or just chop each into two halves.
- Fill a large saucepan or skillet with 1 cup of water and let it boil. Add beans, cover and steam for 5 minutes. Remove, drain and transfer them to a bowl.
- Wipe the saucepan and make it moisture-free. Heat oil over medium high until it’s smoking. Add onions and sauté for a minute. Put garlic and stir around. Add Mushrooms and continue stirring for another 5 minutes to ensure they don’t burn and till the water oozes out. Add some salt but not too much as you will be adding soy sauce later.
- Add beans and stir for around 2 minutes. Add soy sauce, cornstarch, and red chilli flakes (optional), and carefully give it all one big stir. Remove from heat. Don’t let it linger for long otherwise your dish will become all mushy.
- Serve hot, and straight from the pan.
