If you’re a mushroom fan, then try this for sure. Mushroom Roll is juicy, delicious and can be rolled up in just minutes! Bring together all of your favorite veggies and indulge in a power packed lunch.
INGREDIENTS:
- Mushroom – 2 cups
- Onion – thinly sliced, ½ cup
- Bell peppers – ½ cup
- Avocado (optional) – 1, cut into big chunks
- Tortillas/Rotis – 4
- Garlic – chopped, 1 tsp
- Oil – for cooking
- Coriander leaves – to sprinkle
- Lime – 1
- Toppings – mix of finely chopped onions, tomatoes, green chillies and coriander leaves
METHOD:
- Heat oil in a large non-stick pan. Add mushroom and sauté for 5 minutes on medium heat.
- Add onion, bell pepper and garlic. Stir for 2-3 minutes, making sure the bell pepper is still crispy. Squeeze in lime juice. Add salt and pepper.
- Warm flour/whole wheat tortillas or prepare rotis. Place mushroom potpourri in the center. Top it with avocado chunks and onion, tomato, chillies, coriander leaves mix. Roll up tight.
- Repeat the same for rest of the tortillas.
- Serve your roll hot!
Yield – 2 servings
@ Roh – Yes, it is convenient and taste good, especially if you’re a Mushroom fan. I suggest you use the raw toppings – of onion, tomato, green chillies and coriander leaves, very little of this. This will add crunch to your roll and maybe enhance the taste, but it’s not all that needed (but use green chillies and coriander leaves). If you don’t want to use the raw onion and tomato, then do not saute them with mushroom since you will be using onion along with bell peppers.
Wow, this appears nice and very convenient,like an instant snack kind of a thing. I shall try it for sure but I would rather saute mushrooms with the toppings that you have mentioned. I somehow do not like the taste of raw onions and tomatoes.
