Nutty beans!


Combine almonds and beans to conjure up a delicious, nutty, crunchy meal. You could give a try to this Americanized version of your favorite green beans because it is so simple yet so powerful to instantly please you.

INGREDIENTS:

  • Green beans (stems ends trimmed) – a small bunch
  • Garlic flakes – minced, 1 1/2 tsp
  • Salt and pepper – to taste
  • Oil – 1 tsp + 1 tbsp
  • Almonds (sliced) – 2-3 tbsp (8 pieces)
  • Crushed red chilli flakes (optional) – 1/2 tsp

METHOD:

  • Heat 1 tsp oil in a medium skillet. Add the almonds and keep stirring for 2 minutes, until they turn golden brown. Remove from fire and keep aside in a plate.
  • In the same skillet, bring 1/3 cup of water to a boil (add a pinch of salt). Add beans, cover, and steam on medium heat for 3-4 minutes, or until the beans are tender but crispy. Drain in a colander and rinse under cold running water so that it completely cools. Pat dry with a paper towel.
  • Pour the remaining oil (1 tbsp) in the same skillet, and heat it. Add garlic and stir. Add beans and sauté on medium high heat for 5-6 minutes. Season with salt, pepper and red chilli flakes, and mix it all up so that the beans get nicely coated with the oil and spices. Remove from fire and add toasted almonds (the almond dust that you get when you slice the almonds, use that as well).
  • Take a fork and start picking up!
